A CV ( curriculum vitae ) is usually at least two pages long as it includes a more detailed synopsis of your educational and academic backgrounds as well as relevant experience, certifications, qualifications, awards, honors, affiliations and other details. 

A resume, on the other hand, is a one or two page summary of your skills, experience and education. 

You should choose the format that best suits the position you are applying for.  For a position which requires a lot of technical expertise, say Legal Practice, you may need to include more detailed information and go into great specifications of cases you have acted in. However, either can be used.  It really depends on how much detail you want to go into. 

I would recommend using a CV where you can.  By providing the hiring person with as much information as you can upfront, it allows them to get a better understanding of your skills and a better chance of being successful.  

I would also recommend going only as far back at your last 4 -6 jobs, depending on the level of information you would need to provide.  This is another point where you may consider using a resume instead.  If you have had a lot of jobs (say you are a contactor) you may need to list quiet a few, in which case a detailed CV would probably extend to five or more pages.
